Since his arrival at The Millcroft Fracchioni has been championing a movement to encourage area chefs and restaurants to use organic and natural foods grown in the surrounding Hills of Headwaters region including Dufferin County. When he's not preparing tasting menus and experimenting in the kitchen, Millcroft Executive Chef Roberto Fracchioni can be found visiting his many suppliers, giving cooking demonstrations at trade shows, on television or writing his monthly article, "Frac on Food”. This is posted each month to the Millcroft website and appears in the Orangeville Banner newspaper. The focus is on seasonally-relevant topic to help readers address common culinary issues and to provide little-known insights which can help anyone become a better cook.
